Rita’s Fluffy Protein Pancakes

Ingredients:
2 eggs
1 egg white
2 tablespoons cottage cheese (60g)
half a banana
quarter cup of instant oats
1 heaped tablespoon Psyllium husk (16g)
quarter teaspoon baking soda
quarter cup of milk
serve with two heaped tablespoons of Greek yogurt (60G)
Directions:
Blitz all ingredients in a Nutri bullet or food processor, makes two large pancakes I soak the oats and psyllium husks with about a quarter cup of water while I gather all the ingredients, adjust milk so that you get a smooth consistency. optional: add maple syrup for sweetness, fruit, berries
